Malic acid - colorless crystals, white granules or powder, odorless, easily soluble in water and ethyl alcohol, insoluble in ether, benzene, aliphatic hydrocarbons. In chemical terms, it is a two-basic hydroxycarboxylic acid and can exist in two stereoisomers (chemical compounds with the same atomic composition, but with a different configuration of the arrangement of atoms) - L and D.
Oxysuccinic acid was first obtained by the chemist Karl Scheele at the end of the 18th century from green (unripe) apples, which gave the name to the resulting substance. Stereoisomer L can be found in wildlife and isolated by extraction from plant materials (sour fruits and shoots, tobacco), stereoisomer D must be synthesized. Most often, acid is obtained from maleic anhydride (according to GOST 11153) and drinking water. In addition, both stereoisomers can be obtained by reduction of tartaric or oxalilacetic acid, hydration of maleic and fumaric acids, and other methods. In any case, the resulting product must comply with GOST 32748-2014.
According to GOST, hydroxybutanedioic acid is non-toxic, fire and explosion-proof, a moderately hazardous substance for the human body - the third hazard class. Work with acid should be carried out in overalls in rooms with supply and exhaust ventilation. It must be stored on wooden racks in dry and heated rooms at a temperature of + 10 ... 25 ° C and a humidity of less than 70%.
