Sorbic acid, also called trans-2,4-hexanedienoic acid, is a substance consisting of monoclinic colorless crystals with a faint odor and sour taste, insoluble in water, but highly soluble in alcohol. This substance is used in the form of an additive E 200, which acts as a preservative.
Sorbic acid is found in the juice of many plants, it was first isolated from rowan berries, in Latin called Sorbus. The production of sorbic acid is the condensation of ketene and crotonaldehyde with the addition of an acid catalyst. The resulting lactone is subjected to hydrolysis and subsequent dehydration to obtain sorbic acid.
