Edible salt, which is also called table salt, sodium chloride or sodium chloride, is a white substance of mineral origin, consisting of crystals, soluble in water, eaten as a spice since ancient times. Table salt contains 61% chlorine and 39% sodium. Commonly derived from natural sources, edible salt contains impurities of minerals that give the product gray or other shades.
Food salt production can be carried out by several technological methods:
- Extraction of self-planting (lake) salt, accumulating at the bottom of lakes in layers. This method of obtaining sodium chloride is most common in the CIS countries.
- Extraction from layers of rock salt formed in the thickness of the earth, using the mining method.
- Obtaining garden salt dissolved in the water of lakes, estuaries, by evaporation or freezing.
- Evaporation of evaporated salt found in underground brines.
By quality, salt can be classified as one of the following grades: extra, highest, first, second. According to the size of the crystals, grindings are distinguished with numbering from No. 1 to No. 3.
