This is the result of exposure to phosphoric acid and ammonia in the form of a salt, often white in color (there are different colors, from light to black inclusive). Main properties: water-soluble, non-explosive, does not absorb moisture, and does not crystallize like common salt, neutral, non-flammable, non-toxic.
The chemical formula is (NH ₄ ) ₂ HPO ₄ .

Food additive E342 (ammonium orthophosphates) - refers to acidity regulators, flour and bread improvers, antioxidants and antioxidants of synthetic origin, used for technological purposes in the food production process.

There are three types of ammonium orthophosphates:

• Е342(i) Monoammonium orthophosphate (monoammonium phosphate) with the formula (NH4)3PO4;

• E342(ii) Disubstituted ammonium orthophosphate (diammonium phosphate) with the formula (NH4)2HPO4.

Diammonium phosphate is used in the food industry as a top dressing for yeast in winemaking and brewing. This substance is a yeast growth stimulator. Diammonium phosphate is also used as an additive in some brands of cigarettes, purportedly as a nicotine booster.
